Spinach Noodle Soup with Mix Vegetables

My Mom always try to include green vegetables in whatever dish its possible.....Soup, Salad, Paranthas....that makes the source of nutrition of the food much higher... This fresh-tasting spring-time spinach soup is nutritious and wonderfully light if made without noodles and a full meal or supper if made with noodles. Enjoy this delicious spinach noodle soup with mix vegetables.




Ingredients:
  • 2 ounces Spinach Fettucinne {or any noodles available }
  • 1 bunch (about 4 cups) Spinach (thoroughly washed)
  • 2 teaspoons Vegetable Oil
  • 1 Onion, chopped
  • 2 diced Tomatoes
  • 2 cloves Garlic, minced
  • 1 tablespoon minced fresh Ginger root
  • 1 pinch crushed Red Pepper
  • 1 cup peeled, diagonally sliced Carrots
  • 1 cup diagonally sliced Celery
  • 2 cups snow Peas { Can even use Frozen Mix Vegetable }
  • 4-5 Green Chili
  • 1/4 teaspoon ground Black Pepper
  • 1/2 cup Milk
  • 1 tsp Sugar
  • Salt According to Taste
PREPARATION TIME: 5 MINUTES COOKING TIME: 10-15 MINUTES





Directions:
  1. Cook noodles according to instructions and drain while half cooked.
  2. Heat 1/4 tsp butter in a skillet. Add 2-3 green chilli and thoroughly washed spinach. Sprinkle very little water. Cover and keep on medium heat for 5-6 minutes.
  3. Pour some cold water on it. { Tip: To keep the fresh green color of green vegetables and peas after boiling, they should immediately be transferred or washed in cold water. }
  4. Blend and keep aside.
  5. Meanwhile add onions,tomato, all the vegetables, green chilis, salt with 5 cups of water in a deep skillet. Simmer and boil till vegetables are done. No need to drain. the water is the vegetable stock. { You can also blend the vegetables if you like thick texture and dont want the pieces in the soup }
  6. Heat 1tbsp butter in another a deep skillet. Add minced garlic, ginger, red crushed pepper and blended spinach.
  7. Add milk, boiled vegetables with stock and the half-done noodles and black pepper. Simmer and boil for another 10-12 minutes. Add salt if required. Serve hot. { This soup can also made with Chicken as Chicken-Spinach Noodle Soup with Mix Vegetables. Small pieces of boneless chicken can be added along with mix vegetables for boiling. And instead of water we can use Chicken Stock to give more flavor.}
